Tortilla Pizza



This is an easy homemade recipe. Tortilla actually home made roti or chapathi. You can make a plain cheese Tortilla pizza or add almost any topping you prefer. Easy crust. Save time and money. Have fun! This is mainly a Mexican based recipe.


Ingredients::: 
  • Tortillas/ Roti (we used whole wheat)
  • Chopped beans
  • 1 large onion, chopped
  • 1 tsp. paprika
  • 1 tsp. garlic powder
  • 1 tsp. cayenne pepper
  • Water
  • Olive Oil
  • 1-2 tbsp. taco seasoning
  • One bunch green onions, chopped
  • 1 tomato, diced
  • Salsa, your choice
  • Mexican cheese blend
  • Sour cream

Method:::

  1. Preheat the oven to 400 degrees.
  2. While the oven is heating, take a medium saucepan and saute the onions slightly, but not to the point of soggy. We still want some crunch! Unless you like soggy onions...
  3. After the onions have cooked to your desired texture, add the refried beans and cook on medium-low heat. Add just enough water to loosen up the beans. 
  4. Add the garlic powder, cayenne pepper, paprika, and taco seasoning. Stir until blended and then take off the heat.
  5. Once the oven is ready, line a baking sheet with foil. Take your roti/tortillas (you will need two for each pizza you made), spray lightly with cooking spray, and place on the sheet. Bake for 5 minutes on each side, or until crisp. DO NOT TURN THE OVEN OFF!
  6. Once both sides are crisp, take out of the oven. 
  7. On a plate, begin the layering process. First, baked roti/tortilla, then spread a couple spoonfuls of the beans into a thin layer, on top of the beans, add a little bit of salsa and spread over. 
  8. Add the second tortilla, lightly smooshing it into the bottom layer so it sticks. On top of this tortilla, spoon on a little bit more salsa, add to your desire. 
  9. Add chopped tomatoes, green onions and then top with cheese. 
  10. Place back in the oven until cheese has melted.
  11. Enjoy with sour cream!!

Vegetable Sandwich



Veg Sandwich
This is  famous street food fare. Makes for a filling breakfast or brunch or evening snack. You can have it toasted or just plain without toasting.

Ingredients:::
  • Bread Slices
  • Boiled Potato
  • Cucumber Slices
  • Tomato Slices
  • Onion Slices
  • Capsicum Rounds
  • Chaat Masala
  • Black Pepper Powder
  • Cheese
  • Butter
Green chutney recipe:
  • 1 cup chopped coriander leaves
  • Few mint leaves,
  • 1-2 green chilli,
  • 1 tbsp lemon juice,
  • 1 tsp sugar and
  • 1/2 tsp salt to a fine paste,
  • Little water.

Method:::
  1. Butter two slices. Liberally apply green chutney on the unbuttered sides of both the bread slices. 
  2. On one of the slices, start layering with boiled potato slices, cucumber slices, tomato slices, onion slices and capsicum rounds. 
  3. Sprinkle chaat masala pwd and black pepper pwd on top. 
  4. Layer with a cheese slice (optional). Top with the bread slice and toast till golden brown. 
  5. Serve warm with tomato ketchup.

Cheese Sandwich



Cheese Sandwich

 Ingredients:::
  • Plain Bread slices - 8pc
  • Yellow Pepper/Capsicum - 1/2 pc Chopped finely
  • Red Pepper/Capsicum - 1/2 pc Chopped finely
  • Tomato - 1pc Chopped finely
  • Onion - 1pc Chopped finely
  • Chili Flakes
  • Cheese - Grated
  • Sweet Corn - Some  

Method:::

  1. Arrange pieces of vegetable over each slice of bread, 
  2. Sprinkle some Chili Flakes and lots of Cheese over it.
  3. Bake until the Cheese melts. 
  4. Serve with Tomato Ketchup.

Tips:::
  • Olives, Gherkins, Jalapenos and Baby Corn can be added.

Home Made Pizza



Yummy Pizza
Pizza is an oven-baked, flat, round bread typically topped with a tomato sauce, cheese and various toppings. This home made Pizza is simply made with great and healthy ingredients like baby corn, onion, tomato, capsicum, paneer etc flavored with garam masala and tandoori masala powders. . This is an easy snack option, which is favorite of kids and adults.
 
Ingredients:::
Ingredients
  • 2 pizza base
  • 2 tbsp pizza sauce
  • 2 tsp butter
  • 1 onion thinly chopped
  • 2 green chillies thinly chopped
  • 1 inch ginger Julienne
  • 1/2 capsicum thinly chopped
  • 1/2 cup paneer cubes
  • 1/2 tomato thinly chopped (remove pulp)
  • 2 tbsp sweet corns (boiled)
  • 4 tbsp mozzarella cheese
  • 1 tsp white oil
  • Salt as per taste

For seasoning you need::
  • 1 tsp fresh oregano
  • 1 tsp chilli flakes
  • Tandoori Masala - 1/2tsp
  • Garam Masala - 1/2tsp

Method:::
  1. Heat the oil in a non-stick pan and saute green chillies and ginger julienne for few seconds.
  2. Add onion, capsicum and thinly chopped tomato.
  3. Toss the vegetables with salt as per the taste.
  4. Cook on medium high flame until vegetables tenders.
  5. Now add boiled sweet corns and cubes of paneer.
  6. Mix gently and cook only for 2 more minutes.
  7. Switch off the gas, remove the mixture from the flame and divide into two equal parts.
  8. Take the pizza bases, apply little amount of butter and spread the pizza sauce evenly on pizza bases.
  9. Sprinkle some cheese & masala.
  10. Spread the equal amount of pizza topping/mixture on each pizza base.
  11. Finally top with 2 tbsp of mozzarella cheese.
  12. Heat the tawa or griddle on medium high heat and grease with little amount of butter.
  13. Place one pizza on the hot tawa and leave to cook on low flame for 6-7 minutes.
  14. Cover the pizza with any U shaped vessel from upside down.
  15. Check in between. When the cheese starts melting, then remove pizza from the tawa and place on the serving plate.
  16. Cut into desired pieces with pizza cutter/knife and make wedges, sprinkle some fresh oregano and chilli flakes & masala.
  17. Repeat the procedure with another pizza as well.
  18. Serve immediately to enjoy the hot spicy and yummy pizza.
