Stuffed Tomato



Stuffed Tomato

Tomatoes filled with flavorful mixed vegetables simmered with spicy sauce makes a gourmet, delectable and mouthwatering dish.

Ingredients:::
Ingredients
  • Tomatoes - 4 pc
  • Boiled potatoes - 1/2 cup
  • Paneer (cottage cheese) - 1/2 cup
  • Tomato Sauce - 1 tsp
  • Chilli Sauce - 1 tsp
  • Oil -1 tbsp
  • Finely chopped green chilies - 1 tbsp
  • Finely chopped coriander leaves - 1tsp
  • Dry mango powder - 1/2 tsp
  • Black pepper powder - 1/2tsp
  • Rock salt - 1tsp

Method:::
  1. Score off the top of the tomatoes and scrape out the insides  to get an empty cavity.
  2. Now shred the cottage cheese and the boiled potatoes and mix in all the other ingredients with it.
  3. Heat the oil in a pan and add the mixture after the oil is moderately hot. 
  4. Brown the mixture for 5 minutes stirring constantly. 
  5. Then add the sauces to the mixture & off the flame.
  6. When the mixture comes down to room temperature, stuff it in the tomatoes.
  7. Garnish with coriander leaves & served. 

Tips:::
  1. If you have an oven, just grill it in a preheated oven at around 200 degree centigrade for 10mins. 
  2. Alternatively it can be shallow fried too until the tomatoes are cooked.

Potato Cheese Balls



Evening snacks consist of pakoras and chaats. These easy to prepare snacks are ideal for evenings. You can have a cup of hot coffee or tea with pakoras. The deep fried Indian snack is best teamed up with such hot beverages. You can prepare cheese balls with potato pakoras at home to treat yourself on a lousy evening. Potato cheese pakoras are small balls that are deep fried. The potato and cheese stuffing in this pakora makes it a filling and delicious snack.

Ingredients:::
  • Potatoes- 4 (boiled)
  • Mozzarella cheese- 1 cup (grated)
  • Green chillies- 2 (finely chopped)
  • Garlic- 4-5 pods (minced)
  • Black pepper powder- ½tsp
  • Red chilli powder- 1tsp
  • Bread slices- 10-12 pieces
  • Salt- as per taste
  • Oil- 1 cup (for frying)

Method:::
  1. In a bowl, mash the potatoes with the help of a spoon.
  2. Add the grated mozzarella cheese and garlic. Mix well.
  3. Now add the green chillies, black pepper powder, red chilli powder, salt and mix well.
  4. Cut off the hard ends of the bread slices. Now, soak them in water and then flatten them in a plate. 
  5. Add the cheese and potato stuffing. Gently wrap and close the bread into a small ball.
  6. Heat oil in a frying pan. When the oil becomes hot, gently add the balls.
  7. Deep fry them on a medium flame till they turn golden brown.
  8. Keep turning the balls to allow even frying. When the balls look crisp and fried, strain them. Potato cheese pakoras or balls are ready to eat.
  9. Serve it hot with tomato ketchup and tamarind chutney.

Paneer Roll



Paneer is a diary product that has many health benefits. If made with skimmed or low fat milk, paneer can be a healthy food that can be easily included in the diet. Ingredients:::


Stuffing: 
  • Paneer/cottage cheese, mashed- 1 cup 
  • Onion, chopped- 1 
  • Capsicum, chopped- 1 
  • Green chillies, chopped- 2 
  • Garlic paste- 1 tsp (optioanl) 
  • Turmeric powder- 1 tsp 
  • Salt - To taste
  • Garam masala- ½ tsp 
  • Cumin seeds- 1 tsp 
  • Oil- 2 tbsp 

For Paratha: 
  • Wheat flour/maida- 2 cup 
  • Water- 1 cup 
  • Salt - To taste
  • Ghee- 1 tbsp 

Method:::
  1. Knead a dough with wheat or maida flour. In a bowl, add the flour and mix with water. Sprinkle a pinch of salt and pour the ghee. 
  2. Knead a smooth dough and keep aside. 
  3. Heat oil in a pan. Add cumin seeds. When the seeds start popping, add garlic (optional), onion and capsicum. 
  4. Saute till the vegetables become tender. 
  5. Add turmeric powder, salt, garam masala and green chillies. 
  6. When the masala looks cooked, add the mashed paneer. 
  7. Mix well so that the paneer absorbs the spices. Put the pan off flame. 
  8. Heat tawa (a flat pan).
  9.  Take the dough and make small round balls of it. 
  10. Roll them into paranthas and roast on the tawa. Use oil when the paranthas turn brown. Place the flat round parantha on a plate. 
  11. Put the paneer stuffing on the middle and sprinkle onion. 
  12. Pour tomato ketchup and then roll the paratha. 
  13. Paneer roll is ready to eat!
