Hakka Chicken Noodles

Hakka Noodles belongs to the Indo-Chinese cuisine; an immensely popular and widespread cuisine in India tho’ it bears no resemblance to actual traditional Hakka or to any Chinese dishes. Noodles here are quickly stir fried with a spicy “Indian Chinese” flavored sauce, and crunchy vegetables. Lets prepare the  noodles in my style. 



Ingredients:
 

  • 2 cups Flat Egg Noodles (also called Hakka noodles); boiled and strained
  • 4 chicken thighs boned
  • 1 Table spoon of Garlic Ginger paste
  • 3 Red Chilies
  • 2 Spring Onion
  • 1 small Capsicum (sliced)
  • 1/4 Cabbage
  • 1 big Carrot
  • 1/2 tsp Vinegar
  • 1 1/2 tbsp Oil
  • 1 1/2 soya sauce
  • 1 small Onion
  • Tomato sauce
  • Chili sauce
  • Salt to taste
How to make Hakka Noodles:-
  • Marinate the chicken pieces in soya sauce for about half an hour before you start.
  • Heat oil in a pan, add chili, chopped onion and garlic ginger paste and fry for a minute.
  • Add the chicken pieces and let the meat cook a bit.
  • Cut the carrot into this long matchstick shaped bits and the cabbage into this strips
  • Add the chopped carrot and cabbage.
  • Try and time the capsicum so it gets cooked along with the chicken.
  • Now add the boiled and strained noodles and salt (to taste) and mix well.
  • Add vinegar and soya sauce and some tomato sauce, chili sauce and mix it well.
  • Put the chopped spring onion right at the end and switch off the wok. You want those spring onions nice and crunchy.
  • You can fry an egg or two and place on the top. That does make it more exciting :) 
Tips - Add some Hoisin sauce (if it is possible), it gives a great flavour in this hakka noodles.

Egg Maggi Noodles



There is no need to explain how to cook Maggi Noodles. We all know how to cook Maggi Noodles in a very simplest method in just 2 minutes. I have a very different style of cooking Maggi Noodles. I called the recipe - Egg Maggi Noodles.

Ingredients :::
 Maggie noodles – 200 gms or 1 pack
Onion – one small
Beans, Carrot, Peas – 1/4 cup
Tomato sauce – 1 tsp
Chillie sauce – 1/2 tsp
Soya sauce – ¼ tsp
Ajinamoto – 1 pinch
Eggs – 2
Coriander leaves – 2 springs
Garam Masala – ¼
Oil – 3tsp

Method:::
1. Cook the finely cut vegetables for 5mins and strain.
2. Boil the magi in 3 glass of water without adding tastemaker powder.
3. Put it in a colander to stain the water. Add a glass of cold water on magi to stop it from further cooking.
4. This make noodles separate and not to sticking each other.
5. Heat a spoon of oil in a pan and add biten egg. Scramble it till dry.
6. Take a flat pan and add oil. Fry the finely chopped onion till they are soft and translucent.
7. Now add boiled vegetables and fry them till they are dry.
8. Add all the sauces and ajinomoto ( you can skip this if u don’t like)
9. Fry for a min and add scrambled egg, finely chopped coriander and garam masala to the magi and mix well.
10. Serve hot wit sauce and garnished with tomato slices.

Tips::: You can substitute vegetables with chicken or mutton keema also. Or you can make only with vegetables. Change the garam masala to pepper powder.

Chicken Noodles



Now a days  many kids, youngsters and working people are addicted to junk food like burgers, pizzas, noodles  etc.  But the use of sauces and cheese are not good for health in long run. So lets prepare noodles in Indian flavour. 



Ingredients :::

Noodles -250 gms
Boiled and shredded chicken pieces – 1/2cup
Onion -1 small
Turmeric -pinch
Red chillie powder – 1 tsp
Garam masala powder – 1/2 tsp
Salt -as required
Ginger Garlic paste – 1 tsp
Aji –No-Moto – 1 pinch
Cardamoms – 3
Cloves – 4
Cinnamon – 1 stick
Sahhi Jeera – ½ tsp
Oil – 4 tbsp

Method::: 
1. Boil a liter of water and add noodles. When they are 3/4th cooked remove and strain the water using colander. 
2. Add plenty of cold water to it to stop the further cooking of noodles. 
3. Now add a spoon of oil to the noodles and mix well. This will  prevent them from sticking.. 
4. Heat oil in a pan and fry the finely  chopped onions till they are soft. 
5. Add turmeric and ginger garlic paste and fry a little. 
6. Now add cardamom, cloves, cinnamon ,  shahi jeera , red chilli powder and mix well. 
7. Add shredded chicken , mix with the spices and saute for few minutes. 
8. Now add the noodles along with salt as required  and toss with other ingredients. 
9. Saute on high flame for two minutes and serve hot with tomato sauce.

Tips- You can also prepare this noodles with mutton keema, fried prawns and thinly sliced vegetables like carrot, cabbage, beans, spring onions etc.. or even soya granules.. sometimes paneer sticks. Its all in our hands.
