Chicken Scrambled Eggs

Ingredients:::
  • Boneless chicken- ½ cup (boiled and shredded)
  • Eggs- 4-6
  • Onion- 2 (chopped)
  • Tomato- 1 (chopped)
  • Green chillies- 3 (chopped)
  • Black pepper powder- 2tbsp
  • Chaat masala- 1tsp
  • Milk- 1 cup
  • Shredded cheese- ½ cup (optional)
  • Salt- as per taste
  • White oil- ½ cup

For garnishing
  • Tomatoes- 1 (cut into 4 halves)
  • Onion- 1 (sliced in julienne cutting)
  • Coriander leaves- ½ cup chopped

Method:::
  • Heat 1tsp oil in a frying pan. Add onion and peas. Cook on low flame for 2-3 minutes. 
  • Now add the shredded chicken and saute on medium flame until it becomes tender. 
  • Sprinkle salt, green chillies, and tomato. Mix and cook for 2 minutes.
  • Meanwhile, whisk an egg in a glass and add black pepper powder and 1tsp milk. Mix and pour into the frying pan when the chicken cooks. Mix well so that the egg whites scramble. 
  • Flip and cook on the other side if required. Spread shredded cheese and sprinkle chaat masala.
  • Chicken scrambled egg recipe is ready. Garnish with tomatoes, onion and coriander leaves. You can serve it hot with bread toast or with tomato sauce.

Butter Fish Fry



Butter fish fry is a very popular Bengali recipe. It is a very simple fish recipe where some fish fillets are marinated and then fried in a batter. Ingredients:::
  • Bhetki  Fillets- 1 can
  • Ginger Garlic Paste- 1 ½tbsp
  • Lemon Juice- 1tbsp
  • Red Chilli Powder- 1tbsp
  • Cashew Nuts- ¼ cup (paste)
  • Almonds- ¼ cup (paste)
  • Cornflour- 1-2cups
  • Eggs- 2
  • Milk- Half cup
  • Black Pepper Powder- ½tbsp
  • Butter- 1cup
  • Cucumber- 1 (finely sliced)
  • Tomato- 2 (finely sliced)
  • Onions- 2 (finely sliced)
  • Tomato Sauce- Half cup
  • Salt- To taste

Method:::


For The Butter Fish Fry
  • Take a medium sized bowl and add the ginger garlic paste, lemon juice, red chilli powder, cashew nuts paste, almond paste and some salt to it. Mix it well.
  • Now add the fish fillets in the same bowl and marinate it well for at least 15-20 minutes.
  • Add the cornflour, eggs, milk, black pepper powder and some salt in a large bowl. Stir this mixture well and make a fine batter.
  • Now take a frying pan over the gas oven and add all the butter to it as you need to deep fry.
  • Take the fish fillets one by one and dip them in the batter. Now deep fry them in the frying pan over a medium flame till they turn brown in colour.
  • Strain the extra oil and keep them over a tissue paper so that the extra oil gets soaked away.

For The Serving
  • Keep all the butter fish fry in 4-5 plates as desirable.
  • Garnish with the finely chopped cucumber, tomatoes and onions.
  • Serve the butter fish fry hot with tomato sauce.

Ingredients:::
  • Wheat flour/atta- 2 cups
  • Eggs- 4-5
  • Onion- 2 (chopped)
  • Green chillies- 3-4 (chopped)
  • Salt
  • Oil/ghee
  • Water- 2 ½ cups
Method:::
  • Make a dough of atta/wheat flour. You need to add water, a pinch of salt and 1tbsp ghee/oil to the atta. Knead until the dough becomes soft. Cover it with a wet muslin cloth and keep it aside for 30 minutes.
  • Now take a small ball of the dough and roll it into a roti. Grease ghee or oil with a spoon and then close the roti in a triangular shape. Use dry wheat flour and roll the roti again.
  • Heat tawa (roti pan/griddle). Roast the parantha on both the sides. Spread ghee or oil on the sides.
  • Take an egg and break it on the roasting parantha. Spread onion and green chillies. Sprinkle salt. After 1 minute, flip the parantha on the other side and let the egg cook. When the egg looks like an omelette, take the parantha off flame. Repeat the process with the left over dough.

  • Egg paranthas are ready to eat. Serve it hot with tomato ketchup. 

Tips::: Another way to make egg parantha is by beating the egg with onion and green chillies. Make an omelette and then spread it on the rolled roti after greasing it with oil then follow the procedure (Point 2)

Egg Chop



Egg chop is basically a street food that we enjoy during the rainy season. When the weather is wet and romantic, who can resist such a delicious deep fried snack? If you do not want your family to have egg chop from road side vendors, then make it at home. It is an easy monsoon recipe for the season.
Egg chop is a deep fried snack, so you cannot convert it into a low fat dish. What you can do is use good quality, low cholesterol oil to make it healthy. This will reduce the amount of trans fats in this calorie rich monsoon recipe.

Ingredients:::

  • Eggs 4 (boiled and shelled)
  • Cornflour 2 table spoons
  • Green chillies 2 (minced)
  • Coriander leaves or cilantro (chopped) 1 tablespoon
  • Black salt 1 pinch
  • Breadcrumbs 1 cup
  • Oil 4 tablespoons (for deep frying)
  • Salt as per taste


Method:::

  • Boil the eggs, shell them and keep them aside.
  • Mix cornflour, green chillies, coriander leaves, salt and black salt in a bowl.
  • Add half a cup of water to this and blend into a thick paste.
  • Now heat oil in a deep bottomed pan.
  • Dip the boiled eggs in the batter you have prepared and roll them in breadcrumbs.
  • Deep fry the eggs until they turn deep brown in colour.
  • You can have egg chop with chilli or tomato sauce on a nice rainy day.
